Beetroot Vodka Jelly, Smoked Mackerel and Horseradish

Sometimes you just want to impress. You’ve got a bit more time on your hands and you decide that this dinner party is going to be different. Of course, you may want to include your favourite spelt grain spirit too, and we think we’ve found your answer. From chef Caroline Barty in House & Garden Gourmet magazine – a beetroot vodka jelly with smoked mackerel and horseradish. 



  • 2 tablespoons rapeseed oil
  • 850g beetroot, peeled and finely diced
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 12g gelatine (about 7 sheets)
  • 4 tablespoons Snow Leopard Vodka
  • 6-8 drops Tabasco sauce
  • 4cm piece fresh horseradish, peeled and finely grated or 3 teaspoons grated horseradish from a jar
  • 250ml creme fraiche
  • 100g watercress (to serve)



Base-line 6 x 140ml dariole moulds with a circle of non-stick baking parchment. Heat the oil in a large saucepan and add the beetroot, onion and garlic. Cook over a moderate heat for 10 minutes, stirring regularly. 

Pour in 950ml water and bring to the boil. Turn down the heat and simmer for about 1 hour, or until the beetroot is soft. Soak the gelatine in cold water for 5 minutes.

Leave the beetroot to cool slightly before liquidising it, then pass it through a fine mesh sieve. Pour back into the saucepan and heat gently. Remove the softened gelatine, squeezing out any excess water. 

Stir into the beetroot liquid until dis- solved. Do not let it boil. Take off the heat and stir in the vodka and Tabasco. 

Taste and season with salt and freshly ground black pepper. Cool before pouring into the moulds. Chill for 6-7 hours, or 7-8 for a ring mould. 

Mix the grated horseradish with the crème fraiche and season with salt and pepper. Flake the smoked mackerel into the crème fraiche mixture. Chill until ready to serve.


To serve, run a knife around the edge of the jellies to loosen and unmould on to plates. Heap a little of the smoked mackerel and some watercress to one side.
